Mix together sugar and sodium citrate in a small saucepan to avoid lumps. Add cream and vanilla and mix. Heat gently untill you see small bubbles rising (around 80C)
Meanwhile, pour the powdered gelatine over the 60g water in a metal container and let sit for 15 minutes. Mix with a fork, then heat over LOW heat untill the gelatine is desolved, mixing ocasionally. This should only take about 30 to 60 seconds. Mix into the cream mixture (mix well) and divide into individual portions. (6Jars per 500g cream).
Immediatly cover and transfer to the refrigerator
